The grass pea is a legume that has an old tradition in Sicily. Now almost extinct, it has a very particular taste, and provides exceptional nutritional characteristics: rich in protein, vitamins B1, B2 and PP, calcium, phosphorus and fiber and is excellent for the preparation of soups. It must be soaked for 6-8 hours before cooking.
